A very good place to start with oolong

If you have learned to notice the difference between coffee beans, wine varieties or good olive oil, tea has another category waiting for you.

Oolong sits between green and black tea in the way it is made. The leaves are allowed to oxidise to a point chosen by the producer before they are heated, shaped and dried. That gives oolong an unusually broad range of flavour.

This one sits firmly on the more aromatic side.

The leaves are tightly rolled, then begin to open once hot water reaches them. As they unfurl, the tea develops a distinctive floral character and a long finish.

It is the kind of tea that makes the category suddenly make more sense.

Start here

Give the leaves enough room to open.

Oolong changes as the rolled leaf unfurls, so watch what happens in the pot rather than treating the brewing instructions as something to rush through.

Dry, the leaves sit in small, tightly rolled shapes.

Add hot water and they begin to unfurl.

That physical change is one of the pleasures of oolong. What initially looks like a small amount of tea becomes recognisable leaf in the pot, while the aroma and flavour develop alongside it.

If most of your experience with tea has involved a tea bag disappearing into a mug, this is a particularly good tea to brew somewhere you can actually see it.
